Cheesy Ground Beef & Egg Casserole

Cheesy Ground Beef & Egg Casserole

If you're looking for a warm, satisfying dish that combines seasoned ground beef, fluffy eggs, and plenty of melted cheese, this Cheesy Ground Beef & Egg Casserole is a recipe worth keeping in your collection.

It is simple enough for a relaxed weekend breakfast, yet hearty enough to serve as a complete lunch or dinner. The ground beef is cooked with onion, garlic, and warm spices before being layered with a creamy egg-and-cheese mixture. Everything goes into the oven until the center is perfectly set and the top turns beautifully golden.

The best part is the contrast of textures: tender, savory beef tucked between soft layers of egg and cheese, finished with fresh tomatoes and herbs for a bright touch. It is the kind of homemade dish that fills the kitchen with an irresistible aroma and brings everyone to the table.

Ingredients

For the Ground Beef

  • 1 lb (500 g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon ground cumin
  • A pinch of red pepper flakes, optional

For the Egg and Cheese Mixture

  • 8 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup cream cheese, optional
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

For Topping

  • 1 small tomato, diced
  • 2 tablespoons chopped fresh parsley or cilantro
  • 1–2 green onions, sliced
  • A little extra shredded cheese

How to Make Cheesy Ground Beef & Egg Casserole

1. Cook the Ground Beef

Preheat your oven to 350°F (180°C).

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 3–4 minutes, stirring occasionally, until it becomes soft and translucent.

Add the minced garlic and cook for another 30 seconds. Add the ground beef and break it apart with a wooden spoon as it cooks.

Continue cooking until the beef is nicely browned and completely cooked through. Season with salt, black pepper, paprika, cumin, and red pepper flakes if you want a little heat.

Once cooked, remove the skillet from the heat. Drain any excess grease or liquid from the beef. This helps prevent the casserole from becoming watery.

2. Prepare the Egg Mixture

Crack the eggs into a large mixing bowl and add the milk. Whisk until well combined.

Add the shredded cheddar, mozzarella, and cream cheese if using. Season with a little salt and black pepper, then stir in the chopped parsley.

There is no need to over-whisk the mixture. Simply combine everything until the eggs and cheese are evenly distributed.

3. Assemble the Casserole

Lightly grease a medium-sized baking dish with butter or oil.

Spread half of the cooked ground beef evenly across the bottom of the dish. Pour some of the egg-and-cheese mixture over the beef.

Add the remaining ground beef, then pour the rest of the egg mixture over the top. Gently spread everything into an even layer.

Finally, sprinkle a little extra shredded cheese over the surface.

4. Bake Until Golden

Place the casserole in the preheated oven and bake for approximately 30–40 minutes.

The casserole is ready when the center is set and the cheese on top is melted and lightly golden. If the top starts browning too quickly while the center still needs more time, loosely cover the dish with aluminum foil and continue baking.

Avoid overbaking, as this can make the eggs dry and firm.

5. Let It Rest

Once the casserole comes out of the oven, let it rest for about 10 minutes before slicing.

This short resting period allows the eggs and cheese to settle, making the casserole easier to cut into neat portions.

Top with diced fresh tomato, chopped parsley or cilantro, and sliced green onions just before serving.

Tips for the Perfect Casserole

Drain the beef well. Excess grease or liquid can make the casserole watery and prevent the layers from setting properly.

Don't overcook the eggs. Remove the casserole once the center is just set. It will continue cooking slightly from the residual heat.

Use a combination of cheeses. Cheddar adds a rich, savory flavor, while mozzarella gives the casserole a beautifully melted texture.

Season each component. Properly seasoning both the beef and egg mixture creates much more flavor than relying on salt alone at the end.

Let it rest before cutting. Ten minutes is usually enough to help the casserole hold its shape.

Customize the vegetables. Bell peppers, mushrooms, spinach, or green onions can be added to the filling. Vegetables with a lot of moisture should be cooked first so they don't release excess water into the casserole.

Prepare it ahead of time. You can cook the beef and assemble the casserole several hours in advance. Keep it refrigerated until you're ready to bake, then allow a little extra baking time if the dish is going directly from the refrigerator into the oven.

Serving Suggestions

Serve this Cheesy Ground Beef & Egg Casserole warm, cut into generous squares. A simple green salad, sliced avocado, roasted potatoes, or toasted bread makes a wonderful accompaniment.

For breakfast or brunch, pair it with fresh fruit and a cup of coffee. For lunch or dinner, serve it alongside a crisp salad or roasted vegetables for a complete and satisfying meal.

The combination of savory ground beef, creamy eggs, melted cheese, and fresh toppings makes this an easy homemade dish that feels comforting without requiring complicated cooking techniques.

Enjoy your homemade Cheesy Ground Beef & Egg Casserole!
