Ingredients

For the Savory Beef Base:

  • A pinch of ground nutmeg

  • Salt and white pepper to taste

For the Loaded Topping:

  • 1½ cups sharp cheddar cheese, freshly shredded

  • ½ cup sour cream (chilled)

  • 1 medium vine-ripened tomato, seeded and finely diced

  • 2 tbsp fresh flat-leaf parsley or chives, finely chopped

Step-by-Step Instructions

1. Prepare the Velvety Mash

  • Place cubed potatoes into a large pot, cover with cold water, and season generously with salt. Bring to a boil over medium-high heat and cook for 15–18 minutes until fork-tender.

  • Drain thoroughly. Return the potatoes to the hot pot on low heat for 60 seconds to cook off excess surface moisture.

  • Scatter the freshly shredded cheddar evenly over the mash.
