Ingredients

For the Pasta

  • 20–24 jumbo pasta shells
  • 1 tablespoon olive oil
  • Water, for boiling
  • 1 teaspoon salt

  • 1 lb (450 g) lean ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ cup diced tomatoes, drained
  • 2 tablespoons tomato paste

For the Creamy Ricotta Filling

  • 1 ½ cups ricotta cheese
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • A small pinch of salt

For the Sauce and Topping

  • 3 cups marinara or tomato pasta sauce
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • A pinch of Italian seasoning, optional

How to Make Creamy Ricotta Beef Stuffed Shells

1. Cook the Pasta Shells

Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to the package directions, but stop 1–2 minutes before they are fully tender.

The shells should be flexible enough to stuff but still slightly firm. They will continue cooking in the oven.

Drain the shells carefully and rinse them briefly with cool water to stop the cooking process. Arrange them on a lightly oiled plate or baking sheet so they don't stick together while you prepare the filling.


2. Prepare the Beef Filling

Heat the olive oil in a large skillet over medium heat.

3. Make the Ricotta Mixture

While the beef is cooling, prepare the creamy filling.

In a large bowl, combine the ricotta cheese, egg, Parmesan, mozzarella, parsley, garlic powder, black pepper, and a small pinch of salt.

Stir until everything is evenly incorporated.

Once the beef mixture has cooled slightly, fold it into the ricotta mixture. Don't worry about making it perfectly smooth—the small pieces of seasoned beef throughout the creamy ricotta are exactly what make these shells so delicious.


4. Prepare the Baking Dish

Preheat your oven to 375°F (190°C).

Spread approximately 1 cup of marinara sauce across the bottom of a large baking dish. The sauce should form a thin, even layer.

5. Stuff the Shells

Take one cooked pasta shell and carefully open it with your fingers.

Continue stuffing the remaining shells and arrange them snugly in the dish. They should be close together but not crushed.

Don't completely cover every shell with sauce. Leaving some of the pasta exposed allows the cheese on top to brown beautifully in the oven.

Sprinkle the shredded mozzarella evenly over the shells, followed by the grated Parmesan.

7. Bake Until Golden and Bubbly
