Easy Crockpot Breakfast Casserole
This Easy Crockpot Breakfast Casserole is a delicious, hearty breakfast made with fluffy eggs, savory sausage, crispy bacon, melted cheddar cheese, and fresh green onions. Everything cooks together in the slow cooker, making this recipe perfect for busy mornings, family breakfasts, or weekend brunch.
Ingredients
- 12 large eggs
- 1 pound breakfast sausage, cooked and crumbled
- 8 slices bacon, cooked and chopped
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup milk
- ½ cup diced green onions
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- Cooking spray or a little butter, for greasing
Instructions
1. Cook the Meat
Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain any excess grease.
Cook the bacon until crispy, then crumble or chop it into small pieces.
2. Prepare the Egg Mixture
In a large bowl, whisk together the eggs and milk. Add the garlic powder, onion powder, paprika, salt, and black pepper. Whisk until well combined.
3. Prepare the Crockpot
Lightly coat the inside of a 6-quart slow cooker with cooking spray or butter.
4. Layer the Ingredients
Add a layer of cooked sausage to the bottom of the crockpot. Sprinkle some bacon, cheddar cheese, mozzarella cheese, and green onions over the sausage.
Repeat the layers until all the ingredients have been used.
5. Add the Eggs
Slowly pour the egg mixture evenly over the layers, making sure it reaches throughout the casserole.
6. Slow Cook
Cover the crockpot and cook on LOW for 5–7 hours, or until the eggs are completely set and the center is no longer runny.
Avoid opening the lid too often while cooking, as this can increase the cooking time.
7. Serve
Once cooked, turn off the slow cooker and let the casserole rest for about 10 minutes.
Garnish with additional chopped green onions, slice, and serve warm.
