The Ultimate Cheesy Spinach Casserole
This Cheesy Spinach & Tuna Casserole is an easy, comforting dinner made with tender tuna, fresh spinach, colorful vegetables, eggs, and a creamy, cheesy sauce. Baked until golden and bubbly, it’s a delicious homemade meal that the whole family will love.
Ingredients
2 cans tuna, drained
4 large eggs, hard-boiled and chopped
3 cups fresh spinach
1 red bell pepper, diced
1 yellow bell pepper, diced
1 small onion, finely chopped
2 cloves garlic, minced
1 cup heavy cream
½ cup cream cheese, softened
1½ cups shredded mozzarella cheese
½ cup shredded cheddar cheese
2 tablespoons olive oil
½ teaspoon paprika
½ teaspoon garlic powder
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish.
2. Cook the Vegetables
Heat the olive oil in a large skillet over medium heat. Add the chopped onion, red bell pepper, and yellow bell pepper. Cook for about 4–5 minutes, until the vegetables begin to soften.
Add the minced garlic and fresh spinach. Cook for another 2–3 minutes, until the spinach has wilted. Remove from the heat.
3. Prepare the Creamy Sauce
In a large mixing bowl, combine the heavy cream, softened cream cheese, paprika, garlic powder, salt, and black pepper. Stir until smooth and creamy.
4. Combine the Ingredients
Add the drained tuna, chopped hard-boiled eggs, and cooked vegetables to the creamy mixture. Gently fold everything together until well combined.
5. Assemble the Casserole
Transfer the mixture to the prepared baking dish and spread it evenly.
Sprinkle the shredded mozzarella and cheddar cheese generously over the top.
6. Bake
Place the casserole in the preheated oven and bake for 25–30 minutes, or until the cheese is melted, golden brown, and bubbling around the edges.
7. Serve
Remove from the oven and let it rest for 5–10 minutes. Garnish with fresh parsley and serve warm.
Recipe Notes You can use fresh or frozen spinach. If using frozen spinach, squeeze out as much excess water as possible.
For extra flavor, add a pinch of red pepper flakes.
Mozzarella gives the casserole a deliciously stretchy topping, while cheddar adds a richer flavor.
Allowing the casserole to rest before serving helps it set and makes it easier to scoop.
