  • ¼ teaspoon black pepper

Detailed Preparation Steps

1. Prepare the Chicken

Begin by preheating your oven to 375°F (190°C). Place each chicken breast on a cutting board and carefully slice it horizontally, stopping before cutting all the way through. Open the breast like a book.

Cover the chicken with plastic wrap and gently pound it with a meat mallet or rolling pin until it becomes an even layer, approximately ¼ inch thick. Try not to make holes in the meat, as you need a solid surface for rolling.

Season both sides lightly with olive oil, garlic powder, Italian seasoning, paprika, salt, and black pepper.

2. Make the Filling

Heat a skillet over medium heat and add the fresh spinach. Cook for 1–2 minutes, stirring frequently, until it wilts. Remove it from the heat and allow it to cool slightly.

For the best texture, gently squeeze out excess moisture from the spinach and chop it.

In a bowl, combine the softened cream cheese, mozzarella, Parmesan, chopped spinach, minced garlic, Italian seasoning, and black pepper. Stir until everything is evenly incorporated. Fold in the crispy chopped bacon.

3. Assemble the Roulade

Lay the flattened chicken breasts slightly overlapping one another if you are creating one large roulade, or prepare them individually for smaller portions.

Spread the spinach and cheese mixture evenly over the chicken, leaving about ½ inch around the edges. Avoid adding too much filling, because an overloaded roulade can become difficult to roll and may lose its shape during cooking.

Starting from one of the longer edges, carefully roll the chicken into a tight cylinder. Keep gentle, even pressure as you roll so the filling stays inside.

5. Rest and Slice

This final step is important. Remove the chicken from the oven and let it rest for 10–15 minutes before slicing.

Carefully remove the kitchen twine, then use a sharp knife to cut the roulade into thick slices. Arrange the spirals on a serving platter and finish with fresh parsley and a few pieces of sun-dried tomato if desired.


Tips for Perfect Results

Don’t skip the resting time. Cutting the roulade immediately can cause the flavorful juices and melted cheese to escape. A short resting period helps the chicken remain moist and makes cleaner slices.

Keep the chicken an even thickness. This is one of the most important details. Uneven chicken can cook at different rates, leaving thin sections dry while thicker areas are still undercooked.

Control the moisture in the spinach. Excess water can make the filling loose and may prevent the roulade from holding together properly. Squeeze the cooked spinach thoroughly before mixing it with the cheeses.

Use softened cream cheese. It blends much more easily with the spinach and Parmesan, giving you a smooth filling that spreads evenly.

Don’t overfill the chicken. A generous layer is delicious, but too much filling will make rolling difficult and encourage the filling to spill out during baking.
